Mellow Mushroom Franchise Model Overview
Mellow Mushroom restaurants are full-service pizza restaurants with table service, a full bar and a broad menu of pizza, other food, beer, wine and liquor, plus merchandise; a counter-service fast-fine format arrived in late 2024. A traditional restaurant is a heavy build in leased shell space: leasehold improvements, a large equipment package, an architect, signage and a commissioned art package push the total well into seven figures, and buying real estate roughly doubles the high end. Royalty is 5 percent of weekly gross sales with a 3 percent brand fund and total advertising capped at 5 percent. A designated managing owner must devote full time to the restaurant, which must always be under the direct supervision of that owner or a trained qualified general manager. All owners sign a personal guaranty. The system is mature and flat at around 160 units, nearly all franchised. Item 19 reports annual and weekly gross sales.
