TOUS les JOURS Franchise Model Overview

Tous Les Jours bakery-cafés sell a wide assortment of breads, pastries and cakes baked on premises, plus sandwiches, coffee and other beverages, from roughly 2,500 to 3,500 square feet of in-line or end-cap space in busy retail centers. Franchisees buy proprietary doughs, mixes and branded products from the franchisor and its affiliate CJ Foodville USA. The investment is high-six to low-seven figures, driven by leasehold improvements and a full bakery equipment package. Royalty is 5 percent of gross sales; the ad fund is authorized at up to 3 percent but currently not collected. The owner, or a designated owner with at least 10 percent equity, must supervise the café full time unless an approved general manager with food-service experience is in place. The system has grown rapidly, adding roughly 40 franchised cafés a year with almost no closures. Transfers require approval, a renovation at the franchisor's direction and a fee of half the current franchise fee.

Ideal owner profile

Full-time owner-operator or designated owner with 10%+ equity; approved general manager with food-service background acceptable
Capital for a high-six-figure to seven-figure bakery build-out plus a six-figure opening inventory
Experience running early-morning, production-heavy food operations with skilled bakers and front-of-house staff
Comfortable sourcing proprietary doughs and products through the franchisor's affiliate supply chain
Multi-unit operators get reduced fees and must staff an approved general manager per café
